Winter calls for comfort food, and nothing is more satisfying than a classic beef stew. This hearty dish is perfect for warming up on cold days, with its rich flavours and tender meat. Here’s how to make a delicious beef stew that will become a family favourite this winter.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, peeled and cubed
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 bay leaves
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. Prepare the Beef: Season the beef cubes with salt and pepper. In a large pot, heat the olive oil over medium-high heat. Add the beef in batches, browning on all sides. Remove the beef and set aside.
  2. Cook the Vegetables: In the same pot, add the onions and cook until softened, about 5 minutes. Add the garlic and cook for another minute.
  3. Combine Ingredients: Return the beef to the pot. Add the carrots, potatoes, beef broth, red wine, tomato paste, thyme, rosemary, bay leaves, and additional salt and pepper. Stir to combine.
  4. Simmer the Stew: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the beef is tender and the flavours are well blended.
  5. Thicken the Stew: If you prefer a thicker stew, mix 2 tablespoons of flour with a little water to form a slurry. Stir it into the stew during the last 30 minutes of cooking.
  6. Serve: Remove the bay leaves and serve the stew hot, with crusty bread or over a bed of mashed potatoes.

This classic beef stew is the perfect winter comfort food. Its rich, savoury flavours and tender meat make it a satisfying meal for any cold day.
